Ingredients
    chocolate base:
  • 150 grams flour
  • 60 grams sugar
  • 100 grams butter
  • 3 tablespoons cocoa
  • 2 teaspoons baking powder
  • for the cheese part:
  • 2 eggs
  • 40 grams sugar
  • 100 grams butter
  • 200 grams lowfat quark
  • 37 grams vanilla pudding powder (1 pck)
  • blackberry frosting:
  • 120 grams cream cheese
  • 60 grams butter (room temperature)
  • 180 grams icing sugar
  • 60 grams blackberries
Instructions
  1. chocolate base:
    • mix all ingredients for the chocolate base together
    the mixture will be very crumbly. it should be like that. no worries.
  2. the cheesy part:
    • put the chocolate dough into the muffin tins until they are 2/3 full
    • melt the butter
    • beat eggs until foamy
    • add sugar+ melted (a bit cooled) butter to the eggs
    • add quark and vanilla pudding powder and mix until combined
    • transfer the cheesy-part of the cupcakes to the muffin tins and put them on top of the chocolate base
    bake for 12 minutes ( if you're doing the mini version) . for the average muffin: 20 min baking time. both versions you need to bake at 150°C (fan oven).
  3. blackberry frosting:
    • put blackberries into the food processor
    • use a sieve to get a blackberry puree
    • beat butter + cream cheese until combined
    • add sugar beat until it’s fluffy
    • add blackberry puree
    fyi: you do not want the solid part of the blackberries for your frosting. so really use a sieve here to get a puree. after that: you can pipe the frosting onto the cheesecake :)
