mix all ingredients for the chocolate base together
the mixture will be very crumbly. it should be like that. no worries.
the cheesy part:
put the chocolate dough into the muffin tins until they are 2/3 full
melt the butter
beat eggs until foamy
add sugar+ melted (a bit cooled) butter to the eggs
add quark and vanilla pudding powder and mix until combined
transfer the cheesy-part of the cupcakes to the muffin tins and put them on top of the chocolate base
bake for 12 minutes ( if you're doing the mini version) . for the average muffin: 20 min baking time. both versions you need to bake at 150°C (fan oven).
blackberry frosting:
put blackberries into the food processor
use a sieve to get a blackberry puree
beat butter + cream cheese until combined
add sugar beat until it’s fluffy
add blackberry puree
fyi: you do not want the solid part of the blackberries for your frosting. so really use a sieve here to get a puree.
after that: you can pipe the frosting onto the cheesecake :)
