Heavenly Tiramisu Cupcake

Description

you may know tiramisu, but you do not know how it can take you to another dimension of creaminess and softness.

these are knocking on heaven's door kinda cupcakes.
this is definitely something you want to taste. 

Ingredients
    cake:
  • 250 grams flour
  • 50 grams sugar
  • 200 grams butter (roomtemperature)
  • 3 eggs (roomtemperature)
  • 5 teaspoons milk
  • 3 teaspoons baking powder
  • a little bit of salt
  • 100 milliliters espresso
  • 60 milliliters amaretto
  • for the heavenly topping:
  • 200 grams whipped cream
  • 25 grams icing sugar
  • 250 grams mascarino (lighter version of mascarpone)
  • a bit of cocoa powder
Instructions
  1. all in one bowl
    • put all ingredients into one bowl and mix them until combined
    • transfer the batter into a muffin tray - one scoop = one muffin
    • bake for 25 min at 180°C

  2. heavenly topping:
    • whip the cream
    • mix mascarino + icing sugar
    • put in the whipped cream and carefully stir it until everything is combined
    put into the fridge while you wait for the muffins to be done. the muffins need to cool first, before you top them with the mascarino-mixture.
  3. for the tiramisu kick:
    • mix espresso + amaretto

    • make small holes (with a toothpick) into the muffins

    • carefully pour over the espresso mix with a spoon

    make sure you don't add too much fluids - otherwise the sponge will soften too much and fall apart.
  4. now make them pretty:
    • top the tirmasu-muffins with the heavenly mascarino/whipped cream topping

    • put some cocoa powder on top
